This just did not work for me and my husband. Guess we're not fans of peaches in our quesadillas. Followed the recipe exactly. It didn't have a lot of flavor. The peach flavor was overwhelming.

Loved this! Teenage boy finished first serving then headed back to kitchen to prepare his second rather than wait for the cook to finish eating! Perfect recipe for delicious summer peaches. Used chicken breast that had been marinated in Kraft Zesty Italian dressing and barbecued the night before. Left-over chicken worked perfectly.

I love this recipe! It was so easy to make and very tasty. At first, I was a little reluctant to make this dish on account of the pepper jack cheese and peaches. I wondered if the two would taste good together. Once I took that first bite, I became a fan for life. I was pleasantly surprised at how fast it took to make the meal. I would say you could use this as a main course or as an appetizer.

Made a couple minor changes, using what was on hand. Subbed corn tortilla for flour and chipotle jack cheese for jalapeno; also omitted cooking spray. Plated wedges with the sour cream sauce and also offered Trader Joe's chipotle salsa. Served with cups of CL's spicy corn & crab chowder, from same issue. Good Sunday (pre-football) lunch.

My friends and family loved these. I served them as appetizers and even at room temperature they tasted great. The sauce makes it. As a dinner, I like it with shredded romaine lettuce.

I've made these twice to great applause from my husband. Used nectarines and peaches - both successful. Satisfying lunch fare or a light dinner. The sour cream dip adds that little bit of flavor that really puts it over the top.

Easy weeknight meal. I used a cheddar jack mix instead of pepper jack and it was very tasty. Did not make the salad - made my own salad with lettuce, avocado, pepper and tortilla strips.

This is easy and delicious! The peach adds an unexpected sweetness to the quesadilla, making salsa unnecessary. I used monterrey jack instead of the pepper jack, and served them sliced into 6 wedges each as an appetizer for friends. They were a big hit! This is a great way to take advantage of summer peaches, and to use leftover rotisserie chicken.

An amazing yet simple recipe! I cooked chicken tenders in a pan using pam, salt, and pepper before hand and used that instead of rotisserie. Otherwise, I wouldn't change a thing - my fiance complained a little about the idea looking at the recipe, then wanted me to make them again soon after he had a few bites. The sour cream combination was also amazing.

It was horrible! I waited until I could get fresh, sweet, and juIcy peaches from Michigan and made it last night. What a dissapointment. I thougt that maybe the sauce would tie it together but it didn't.

We had these for dinner tonight and gobbled them up. They were good, and I would definitely make these again. I used regular monterey since we have a toddler (who LOVED the sour cream sauce), and cooking in the cast iron skillet with one on top worked great. I did put some butter in the pan for some nice browning. I pressed them together firmly before putting them in the pan and nothing really fell out. We made extra sour cream but didn't really need to; there was plenty. I did add some lime zest to it and put some sliced jalepenos in my husband's quesadillas.

I was worried when I picked this recipes. I did not know how peaches would taste with sour cream and pepper cheese..It was very tasty. The peaches gave it a sweet and sour taste. I made it just as the recipe stated. Easy and tasty.

They sound kind of strange, but they are outstanding! Even my husband, who claims to not like peaches, loved the quesadillas. The peaches just offset the spicy cheese perfectly and add a subtle sweetness. The sauce is a perfect match. Very easy to make and satisfying. I will definitely make these again.

Very good. A bit time-consuming when you make your own tortillas and chicken, but as these will already be made the next time it should come together quickly. I pounded skinless chicken breasts to 1/4", rubbed them with salt, pepper, dried cilantro and ground cumin and cooked them in the skillet, although I could have grilled them instead. They were a bit difficult to turn as the peaches made the tortillas a little soggy, but the flavor - especially with the sour cream sauce - was outstanding. I used regular jack cheese as my husband doesn't do spicy, but I imagine the flavor contrast would have been more pronounced with pepper-jack. Maybe I'll punch it up sometime when he's not home, but I'm definitely making these again!

LOVED THIS! I steamed some boneless breasts, and then shredded it. I also did not peel the peaches. The sour cream dipping sauce was amazing with it. My husband said that the cumin spinach salad was his favorite for the week. So tasty and unexpected flavors!

Made this today as an appetizer for a group of friends. I made with ingredients as specified in the recipe, but I didn't fold the tortilla (placed 1 tortilla in pan, doubled toppings and place another tortilla on top.) It was a hit with everyone; it's a great combination of flavors. It was so easy to do that I will definitely repeat.

This is so easy to make. Instead of folding the quesadillas, I just added more ingredients and then placed another quesadilla on top of it in the skillet. I still felt like it needed something, so I added grape tomatoes and green onions to spice it up a bit. I couldn't find shredded pepper jack cheese at my grocery stores, so that probably would have helped. As for the salad, it was okay, I'm going to add more cumin and more sauce, b/c I really couldn't taste anything. I also served this with Spanish rice.

Delish! I used cheddar cheese for the kids, but shredded pepper jack (purchased at Trader Joe's pre-shredded to save even more time) and we LOVED them. I might put cilantro in the sour cream next time because it wasn't enough cilantro for me, but definitely give it high marks.

This was VERY good. Great combo of salty, sweet, and spicy. I had fresh peaches from the market to use. My husband is somewhat picky and loved it. Had it with the Spinach and red onion salad with the cumin vinagrette (in Cooking Light August magazine). Great for a quick dinner during the week.

This was such a great way to make the best of the peaches in season right now. I only had a turkey breast in the fridge, so I grilled it 6 min/side with a little bit of olive oil, salt, pepper, cumin, and chili powder, then diced it and used that as the meat. I'm so glad I did. I also had some leftover black beans, and they were a nice earthy addition to the sweet peaches. I'll be making this again.

This recipe was amazing! My husband and I really liked it. We have very few recipes that we repeat since we like to try new things all the time, but we will definitely be making this one again. It's so easy to make, super fast, and doesn't have complicated ingredients. I can never find shredded pepper jack cheese at the grocery store, so I used Monterrey Jack and added some diced jalapenos. The spicy jalapenos with the sweet of the peaches is perfect! The sauce was great as well. The honey and lime go really well with the sour cream. Overall definitely a winner in our house!
